Long before Spotify and curated playlists, lived Mr Herbert More, the charismatic conductor of the Palm Court Orchestra at Patrick Thomson’s, Edinburgh’s much-loved department store. From beneath the grand domed ceiling, Herbert and his musicians provided the soundtrack to many a stylish afternoon, filling the air with everything from classical favourites to the latest popular tunes.
But this wasn’t just any orchestra; he knew how to keep the crowd involved. Guests didn’t just listen; they became part of the performance, slipping song requests to the waiting staff who would pass them along to the maestro himself.
Now, in a nod to his legacy, “Herbie More’s” brings back that spirit of elegance and indulgence, only this time, the requests come in the form of expertly crafted drinks and cocktails. Raise a glass, soak in the atmosphere, and toast to the man who knew how to strike just the right note.

Our house pour, the Conductor’s Batch, strikes just the right note. Produced at Summerhall Distillery, found along the route Herbie once walked home, it pays homage to our namesake. Served as a crisp G&T or one of our signature cocktails, this gin carries the spirit of the man and the music at the heart of our bar.
Herbie More’s local coffee supplier, Hometown – Mindful Coffee Roasters, embodies the spirit of local entrepreneurship. What began with three bags of green coffee and a passion for the perfect brew has blossomed into a thriving roastery that prioritises community and sustainability.
