Nestled within the iconic Hilton Edinburgh Carlton, we are proud to call home a building that has stood at the heart of the city’s story for centuries. The site first came to life in 1772 as part of the grand North Bridge project, a visionary development that united Edinburgh’s Old and New Towns and forever transformed the city’s skyline. By the late 1800s, the area was graced with the intricate beauty of Victorian architecture, including the original Carlton Hotel, masterfully designed by George Beattie and Son.

A new chapter began in 1984 when the historic Carlton Hotel joined with the beloved Patrick Thompson’s department store, bringing together two icons under one roof. This inspired transformation gave rise to the Carlton Highland Hotel, a seamless blend of retail charm and refined hospitality, paving the way for what is today the Hilton Edinburgh Carlton.

At Herbie More’s, we honour this remarkable legacy while adding our own contemporary touch. Our name pays homage to Mr Herbert More, the cherished conductor of the Palm Court Restaurant, whose music filled the hotel with warmth and elegance for over four decades. His passion for creating memorable moments lives on, in every note of our story, every conversation shared, and every glass raised in celebration of Edinburgh’s timeless charm.
